Mustard Sardine Deviled Eggs |
Ingredients

* 6 eggs, hard cooked
* 1 can water packed sardines
* 1/2 cup sour cream or Greek yogurt
* 1 Tbsp spicy brown mustard
* 1 tsp finely chopped chives or green onion
* 1 tsp lime juice
* 1/4 tsp kosher salt
* 1/8 tsp black pepper
* dash cayenne
* dash smoked paprika
* fresh parsley for garnish

Directions

1. Peel and cut the hard cooked eggs in half lengthwise, removing yolks to a bowl.
2. In the bowl with the yolks, add the remaining ingredients and mash together, mixing until smooth.
3. Spoon mixture into hollow of each egg white and set on serving platter.* Sprinkle with more paprika if desired, then garnish with parsley sprigs.
4. Serve immediately or cover with plastic wrap and keep in refrigerator until ready to serve.

You can buy sardines packed in mustard sauce and skip adding the mustard called for in the recipe. However, if you're on a low carb diet, or any other diet, be sure to read the nutrition label before you decide.
Sardines are rich in protein along with calcium and iron. Of course, combined with the eggs, there is no denying that this snack is a nutrition powerhouse!
* Note: Want a trick for keeping your deviled eggs from sliding around the serving platter? Cover the platter with a layer of dried lentils! The pretty green color complements the color of the deviled eggs and the eggs stay in place. Enjoy!
