Navy Bean & Parsley Puree with Penne Pasta

Ingredients

* 12 oz penne pasta, cooked and drained per package directions
* 1 medium onion, diced
* 2 tablespoons butter
* 8 oz can Navy beans, rinsed and drained
* 1/2 cup whole milk
* 1/2 cup finely chopped fresh parsley

Directions

1. Cook the onions in butter until onions are tender.
2. Stir in the beans and milk and cook over low heat for 8 to 10 minutes, stirring occasionally.
3. Remove from the burner and let this mixture cool slightly.
4. Pour the bean-milk mixture into a food processor and pulse until smooth.
5. In a large saucepan, combine the cooked pasta and bean mixture.
6. Stir in the parsley and reheat together over a very low heat for about 5 minutes, stirring frequently.

Story

Be sure to use nice fresh parsley in this dish as that's where a lot of the flavor and color will come from. This is a very simple pasta dish but one that will surprise your family or guests as soon as they dig in. The beans provide protein, so it's also the perfect dish to serve your vegetarian friends.
