No Bake Quick'n Easy Cheescake |
Ingredients

* 1 Large Tub of Whipped topping (can be any brand-regular or lite)
* 1 Large Cream Cheese
* 1 Cup Icing Sugar
* Frozen Graham Cracker Crust or Make your own
Crust:
* 1 1/2 graham or chocolate wafer crumbs
* 2 tbsp margarine/butter melted
Optional: add 1/4 tsp cinnamon and/or add 1/4 cup finely chopped nuts (pecans/almonds/walnuts)
(I often double the above recipe)
One Can of Fruit Topping (Cherry/Raspberry/Blueberry, etc)

Directions

Crust:
In a bowl, combine all incredients. Mix well until mixture is crumbly. Pat into the bottom and up the sides (1/4 inch) of an 10 inch springform pan. Bake at 350 for 10 minutes. Cool.
1. Leave Cream Cheese and Cool Whip at room temperature for an hour or follow instructions on package to soften cream cheese.
2. With electric mixer beat cream cheese while sprinkling in the icing sugar.
3. Fold in thawed Cool Whip.
4. Blend mixture on low till completely mixed.
5. Pour into cooled springform pan. Refridgerate for one hour to set.
6. Top with Pie Fruit topping. Keep in Fridge. Enjoy!

35 years ago my aunt served up a wonderful dessert. It was in a square pan, was cool, light and yummy! I absolutely loved it. Years later when I started entertaining in my own home I made a point of getting the recipe. I'm not sure where she got the recipe. I am a cheescake lover and have over 200 recipes but the one that I am most likely to make when I need a quick and delicious dessert is this one. It is not heavy and I've never met anyone who didn't like it.
