* corn flour
* salt
* black pepper
* onion powder
* garlic powder
* any dried herb mixture you like (parsley, thyme, dill, etc.)
* cayenne pepper (optional if you want it cajun style)

My Dad was a fisherman so we fried a lot of fish in my house. I can't imagine my Mom and Dad going to the store and actually buying those little boxes of fish fry seasonings. One thing we discovered was when you replace regular white wheat flour with corn flour, or even corn meal, you get a nice, crunchy coating on the fish. We seasoned it up in a number of ways, like adding finely chopped chives to add color and flavor. Experiment with this one. You really can't go wrong.
