Northern Bean & Veggie Casserole

Ingredients

* 16 oz can great northern beans, drained
* 1 cup chopped onion
* 1 1/2 cups chopped celery
* 14 oz can chopped tomatoes, drained
* 16 oz can whole kernel corn, drained

* 1/4 cup flour
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 3 cups milk

* 4 oz shredded Monterrey Jack cheese

Directions

1. Preheat oven to 375.
2. Put first 5 ingredients in a big bowl and stir to combine.
3. In a separate bowl, whisk together the flour, salt, pepper, and milk.
4. Pour the flour/milk mixture into the beans/veggie mixture and stir to combine.
5. Put this mixture into a casserole dish.
6. Bake uncovered for 25 to 30 minutes.
7. Sprinkle cheese on top and bake another 7 to 10 minutes or until cheese melts and gets golden brown around the edges.

Story

Use this as either a hearty side dish and a simple main dish. It's a frugal, nutritious dish that can really stretch out a paycheck and still fill your family's tummies.

You can also choose any cheese for the topping. Just stick to the white cheeses like Monterrey Jack, Swiss, Mozzarella, or Parmesan.
