Nutty Apricot Butter |
Ingredients

* 6 oz package dried apricots
* 1/2 cup water
* 8 oz package cream cheese, cubed and at room temperature
* 1/2 cup chopped walnuts
*serve on bagels, crackers, toast, or even on celery sticks

Directions

1. Soak apricots in water overnight.
2. Drain, reserving 2 tablespoons of the liquid.
3. Put the apricots and reserved liquid in a blender and blend for about 10-12 seconds.
4. Add cream cheese and blend another 15 seconds.
5. Add walnuts and blend just until they are mixed in.

You'll have to try this treat before you'll be able to decide how to serve it. I like bagels, so this is a natural match. But, if you like crackers, that works, too.
The most surprising compliment was actually spreading a little of this mixture in celery sticks as a pretty and delicious appetizer.
