Nutty Brown Sugar Squares |
Ingredients

* 1 cup flour
* 1/4 tsp salt
* 1/4 tsp baking soda
* 2 cups brown sugar, packed
* 2 cups walnuts, chopped
* 2 eggs
* 1 tsp vanilla extract

Directions

1. Preheat oven to 325 degrees and line baking sheet with parchment paper.
2. In large bowl, stir together the flour, salt, and baking soda. Add the brown sugar and walnuts and mix until blended well.
3. In separate bowl, whisk eggs together with vanilla extract. Stir egg mixture into dry mixture and stir until combined.
4. Press dough onto bottom of baking sheet.
5. Bake in preheated oven at 325 degrees for 12 to 15 minutes or until browned lightly. Remove and let cool on rack, then cut into squares.

This is the kind of dessert recipe I like to keep handy for last minute surprises. I can pretty quickly make a batch if the kids come home and say; "We're invited to the neighbors. They're having a cookout and said we should come." The ingredients are normally in my kitchen, so it's no trouble at all. And, they are very tasty. Both kids and adults like them.
The brown sugar is what gives them that extra flavor. Use darker brown sugar for a stronger flavor, and light brown sugar for a lighter flavor. Whichever you prefer.
You can make a molasses icing to drizzle over these squares if you like. Since molasses is the ingredient in brown sugar, having a molasses icing would give your dessert an additional layer of flavor.
Just pour a little molasses in a bowl, sprinkle in some confectioners sugar, stir, and adjust amounts until you get a drizzle consistency. You can thin it with a little milk and add other flavors if you choose, such as ginger or nutmeg. Then just drizzle over the top of the cooled bars and let sit for 15 minutes or so to set up.
