Nutty Fruit and Coconut Squares

* 12 oz mixed dried fruit of your choice
* 4 oz of cashews
* 4 oz desiccated coconut
* 1 orange rind, grated
* 1 tsp orange juice
* Extra desiccated coconut for coating

1. In a food processor process dried fruit mixture and nuts until finely chopped.
2. Add the coconut and orange rind and process until well combined.
3. Add the orange juice and process until the mixture forms a paste.
4. Sprinkle 1/2 of the coconut into the bottom of an 8 inch square pan.
5. Press the fruit mixture into the pan pressing the mixture down well.
6. Sprinkle the remaining coconut evenly over the top.
7. Cover and place a weight on top of the pan to keep the squares pressed down.
8. Chill 2 hours or until firm then cut into 1 inch squares.

These little bars and ooey and gooey and really, really sweet. You'll need a tall glass of cold milk alongside to really enjoy them.

If you can't buy desiccated coconut, you can make your own by simply laying shredded coconut on a cookie sheet and baking it in a 250 degree oven for 5 to 10 minutes or so. Be ever watchful, turning the pan and giving the coconut a toss or two so as not to scorch it. When it's sufficiently dried out, you can turn it into a finer texture by squashing it with a spoon or spatula after it cools, or you can put it in the food processor. Personally, a spatula works just fine.
