These little bars and ooey and gooey and really, really sweet. You'll need a tall glass of cold milk alongside to really enjoy them.
If you can't buy desiccated coconut, you can make your own by simply laying shredded coconut on a cookie sheet and baking it in a 250 degree oven for 5 to 10 minutes or so. Be ever watchful, turning the pan and giving the coconut a toss or two so as not to scorch it. When it's sufficiently dried out, you can turn it into a finer texture by squashing it with a spoon or spatula after it cools, or you can put it in the food processor. Personally, a spatula works just fine.
