Nutty Spinach in Celery Boats |
Ingredients

* 2 C of fresh spinach
* 2 garlic cloves, minced
* 1/2 C Parmesan cheese, grated
* 1/4 C walnuts, chopped
* 1/4 olive oil
* 8 celery stalks

Directions
|
1. Place the spinach, garlic and cheese in the blender.
2. Blend the mixture until the ingredients are blended together well.
3. Add in the walnuts and olive oil.
4. Continue blending until the mixture is smooth again.
5. Cut the celery stalks into 2 inch pieces.
6. Fill each piece with the spinach filling.
7. Refrigerate until ready to serve.

Even for youngsters who claim not to like spinach, this little snack is a real winner. The Parmesan cheese wins over the finicky eaters, and the walnuts add a nice crunch for the eaters with a bit more adventure.
