One Skillet Chicken Snow Pea Dinner |
Ingredients

* 4 boneless, skinless chicken breasts
* 2 tsp + 1/2 tsp lemon pepper, divided
* 2 Tbsp + 1 Tbsp butter, divided
* 2 cups fresh snow peas, strings and tips removed
* brown rice or quinoa for serving

Directions

1. Season the chicken breasts on both sides with the 2 teaspoons lemon pepper.
2. Melt the 2 Tablespoons butter in a large skillet over medium heat.
3. Add the chicken to hot skillet and cook 10 to 12 minutes, turning occasionally, or until chicken is no longer pink in the middle.
4. Remove the chicken from skillet and keep warm.
5. Melt the remaining 1 Tablespoon butter in the same skillet over medium heat.
6. Stir in the snow peas and remaining 1/2 teaspoon lemon pepper and cook, stirring constantly for 2 or 3 minutes or until snow peas are just tender.
7. Serve chicken with snow peas alongside.
8. Include a side dish of quinoa or brown rice for a complete meal.

Isn't it great making dinner in just one skillet? If you can't buy fresh snow peas, use frozen. Just let them thaw and dry completely before throwing them in the hot skillet.
I like using quinoa as a side dish in this meal. After sauteing the snow peas, throw cooked quinoa in the skillet and stir just long enough to heat through. It will only take about 30 seconds. Enjoy!
