Overnight Cheesy Oven-Baked Eggs |
Ingredients

* 12 eggs
* 1/2 cup heavy cream
* 2 tablespoons butter
* 1 cup sour cream
* 1 cup shredded cheddar cheese
* 1/8 teaspoon white pepper
* 1/2 teaspoon salt

Directions

1. Beat the eggs with the cream. Heat butter in a large skillet over medium heat then pour eggs in. Scamble eggs, stirring occasionally, until lightly scambled but still a little wet.
2. Take pan off heat and add sour cream, gently stir. Place egg mixture in a baking dish then top with cheese. Cover and refrigerate at least 8 hours or overnight.
3. Remove cover, sprinkle with salt and pepper, then bake at 350 for 25-30 minutes.

This oven-baked egg dish is very, very creamy and cheesy. It feeds a whole houseful of hungry guests or makes a nice brunch dish for the after church crowd.
You can make it more husband-friendly, at least in my house, by adding a bit of cooked bacon or cut up cooked sausage. We've even thrown in leftover bratwursts! For veggie lovers, toss in a few onions and green peppers as you scramble the eggs. Not too much, but just a taste. This dish really works with just about anything you want to use up.
