Overnight Oatmeal Pancakes |
Ingredients

* 2 c rolled oats (not the quick cooking kind)
* 2 cups buttermilk or plain yogurt
* 2 large eggs, beaten
* half stick butter, melted
* 1/2 c flour
* 1 T. sugar
* 1 t. baking powder
* 1 t. soda
* 1/4 t. salt

Directions

1. Mix oats and buttermilk or yogurt in large bowl and let sit overnight.
2. In the morning, mix eggs and butter with oat mixture.
3. Stir dry ingredients together and add to other ingredients.
4. Coat nonstick griddle with a small amount of oil. Preheat on low/med heat. When hot, add batter in 1/4 cup amounts. These pancakes take longer to cook...about 3 minutes each side.

These are delicious, moist and nutritious pancakes. They have much more "stick-to-your-ribsness" than most pancakes. They require some advance planning but are so worth it! Serve with butter and warm syrup.
