Parcels of Baked Chicken

Ingredients

* 4 chicken breasts
* 1 cup mushrooms (finely sliced)
* 2 cups potatoes (finely sliced )
* 2 tablespoons olive oil
* 1 tablespoon parsley (finely chopped)
* 2 tablespoon fresh lemon juice
* Salt and pepper (optional)

Directions

1. Cut three slits on top of each chicken breast.
2. Add all ingredients into a large bowl and combine.
3. Cut four sheets of aluminium foil.
4. Add each piece of chicken breast together with a handful of ingredients on top of each sheet of aluminium foil.
5. Place the chicken parcels on a baking tray.
6. Bake in 375F preheated for 20 minutes or until chicken is fully cooked.
7. Serve with salad.
