Parmesan Bacon Cauliflower Bake |
Ingredients

* 2 TBSP butter
* 1/2 yellow onion, chopped
* 3 cloves garlic, minced or mashed
* 1 small head cauliflower, coarse chopped
* 2 eggs, beaten
* 1 cup Parmesan cheese
* 5 slices bacon, cooked crisp and crumbled

Directions

1. Preheat the oven to 350 and grease a small baking pan.
2. Melt the butter over medium heat in a skillet then stir in the onion and garlic, cooking until tender.
3. Add in the cauliflower, stir and cook 1 minute.
4. Stir the eggs, Parmesan cheese and bacon together in a bowl.
5. Place the cauliflower mixture in the prepared baking dish and top with the bacon mixture.
6. Bake 50 to 60 minutes.

I made this cauliflower dish one year for Thanksgiving and decided that it needed to come out of my "holiday only" recipe stack. Anyone trying to get kids to eat their veggies knows that usually if you cover cauliflower or broccoli in cheese, it will pass the test. How finicky can a kid be when you've got cheese AND bacon in the same dish?!
