Peach Whip

Ingredients

* 1/2 cup finely chopped peaches (fresh or canned)
* 1 tablespoon orange juice
* 1 tablespoon brown sugar
* 1/4 teaspoon cinnamon
* 2 cups whipped topping

Directions

1. Combine first 4 ingredients in large salad bowl, making sure brown sugar is blended well.
2. Fold in whipped topping until combined thoroughly, but do not over stir.
3. Cover and refrigerate 1 to 2 hours before serving.

Story

If you've made a number of these "whipped" desserts before, you'll find this one just a bit different. Using peaches is a nice surprise. This dessert or salad (whichever you choose to call it) is an excellent accompaniment to baked ham. Peaches and ham naturally go together.

I've used fresh and canned and both work well. If you use fresh, be sure to peel them. If you used canned, be sure to use the ones in light syrup, not heavy. You'll have enough sweetness in the brown sugar and whipped topping.
