1. Season the thighs all over with the pepper and place into crock pot.
2. Mix together the peanut butter, soy sauce, orange juice, and ginger until well blended.
3. Pour the mixture over the chicken thighs making sure they are covered well.
5. Cover crock pot and allow to cook 7 to 7 1/2 hours on LOW.

Ginger, peanut butter, soy, and citrus are a classic combination in my house. I can't remember the last time I made anything with peanut butter when I didn't use these ingredients together, except maybe PB&J's. This is a really kid-friendly recipe because what kid doesn't love peanut butter! The sweetness added with the orange juice doesn't hurt either.
