Pimento Pepper Ranch Rollups |
Ingredients

*2 (8 oz.) pkgs. cream cheese
*1 envelope dry ranch style dressing mix
*2 jalapeno peppers, chopped fine
*1 (2 oz.) jar diced pimientos, drained well
*8 (8 in.) sun dried tomato or spinach tortillas

Directions
|
1. Mix the cream cheese, dressing, peppers and pimentos together until well blended.
2. Spread the mixture over the 8 tortillas and roll the tortillas around the filling.
3. Wrap each tortilla roll in plastic wrap and chill for at least 1 hour.
4. Unwrap and cut each roll into 8 pieces.

These are as pretty as they are delicious. Next time you have to bring a "dish to pass" to a potluck at work or a snack for book club, make these. They are creamy, spicy, and just plain fun to eat.
