Pineapple Polynesian Chicken Stew - Crock Pot |
Ingredients

* 4 chicken breasts, boneless and skinless, cubed
* 2 carrots, peeled and cubed
* 1/2 C chicken broth
* 1 tbsp brown sugar, packed
* 2 tbsp soy sauce
* 1/2 tsp ground allspice
* 1 tbsp cornstarch
* 1 (8 oz) can pineapple chunks, reserve the juice
* 1 red bell pepper, diced

Directions

1. Lay the cubed chicken into the crock pot.
2. Blend together the broth, brown sugar, soy sauce, allspice and pepper.
3. Pour the mixture in the crock pot.
4. Add the carrots and cover the crock pot.
5. Cook on low for 7 hours.
6. In a mixing bowl whisk the cornstarch and juice until well blended and smooth.
7. Pour the cornstarch and juice mixture over the chicken.
8. Gently stir in the pineapple and bell peppers.
9. Put the lid on the crock pot and turn the heat to high.
10. Cook for 20 minutes or until thick and bubbly.
