Pineapple Upside Down Cake in Spring Form Pan |
Ingredients

* 1 (20 oz) can pineapple chunks juice, in natural juices, drained reserving juice
* 1/4 cup brown sugar, don't pack
* 1 1/2 cup of unbleached flour
* 1 cup sugar
* 1 tsp baking soda
* 1/2 tsp salt
* 1/3 cup oil
* 1 cup reserved pineapple juice (add water to make 1 cup)
* 1 TBSP white vinegar

Directions

1. Heat the oven to 350 and spray a 12 inch spring form pan with cooking spray.
2. Place the pineapple into the bottom of the pan and sprinkle with the brown sugar.
3. Mix the flour, sugar, baking soda, and salt together.
4. Mix the oil, juice, and vinegar together and stir into the dry ingredients.
5. Pour the batter over the pineapple and bake for 30 minutes or until golden brown.
6. Cool then remove sides from spring form pan. Set serving plate on top and invert cake so pineapple is on top.

There are plenty of ways to make a Pineapple Upside Down cake, but this is the easiest method I've found. If you don't have a spring form pan yet, it's worth the investment. Once you get the knack of cooking with one, you'll be baking all sorts of cakes you were too scared to try before! Enjoy!
