* 4 lbs pork shoulder, cubed
* 1 tablespoon salt
* 1 teaspoon pepper
* 1 teaspoon garlic powder, or 1 clove garlic grated
* 1 teaspoon thyme
* 1 teaspoon coriander
* 1 can (15 oz) kidney beans, rinsed & drained
* 1 cup boiling water
* 4 medium potatoes, sliced
* 4 medium onions, sliced
* 8 carrots, chopped

Sometimes, after a long day, a really good traditional stew is just what the doctor ordered. And in keeping with a traditional stew made in a big soup pot, I brown the pork before adding it to the crock pot. It gives the meat, and the finished stew, a nice brown color and adds another layer of flavor to the stew.
