Pork Tenderloin Roasted with Mint and Orange |
Ingredients

* 1 (8-10 oz.) pork tenderloin
* 1/4 tsp. pepper
* 1/3 C orange marmalade
* 2 TBSP low sodium soy sauce
* 2 TBSP fresh mint, chopped
* 2 cloves garlic, minced
* Non stick cooking spray

Directions

1. Set the oven on 350 degrees.
2. Prepare tenderloin by removing any extra fat with a sharp knife. Cut the tenderloin into two equal pieces if necessary.
3. Use a sharp knife to cut a slit 2/3 of the way through the tenderloin along the length so the tenderloin can lay out flat.
4. Spray the tenderloin pieces with the non-stick cooking spray on both sides and sprinkle each tenderloin piece on both sides with the pepper.
5. Lay the tenderloins flat in a large roasting pan
6. Put the marmalade, soy sauce, mint and garlic in a large mixing bowl and stir until all the ingredients are mixed very well.
7. Pour the marmalade mixture over the tenderloins being sure to completely cover.
8. Bake the tenderloins 40 minutes or until any juice runs clear when the meat is pricked with a knife.

It seems like a lot of prep work for the tenderloin, but once you do it you'll see how easy it really is. The pork with orange and mint is a classic combination and would really be nice for a formal dinner. Try serving with a nice garlic smashed potato and side dish of fresh steamed broccoli flowerettes. The pork really stands on it's own here! Enjoy!
