Pumpkin Ice Cream Pie |
Ingredients

* 1/2 C brown sugar
* 4 tsp unflavored gelatin
* 1 tbsp instant coffee
* 1/2 tsp ginger
* 1/2 tsp cinnamon
* 1/4 tsp nutmeg
* 1 C boiling water
* 1 pt vanilla ice cream
* 1 C pumpkin puree
* 1 9 in graham cracker crust

Directions

1. In a large mixing bowl put the brown sugar, gelatin, instant coffee, ginger, cinnamon and nutmeg and toss carefully to combine.
2. Very carefully pour the boiling water over the top.
3. Stir from the bottom up making sure everything is completely dissolved.
4. Add one large spoon of ice cream at a time stirring after each addition.
5. Add the pumpkin puree and stir until completely mixed in.
6. Chill 5 minutes or until chilled enough to mound when scooped out with a spoon.
7. Spread the chilled mixture evenly into the crust.
8. Cover tightly and chill 2 hours or until firm.

Coffee, ginger, cinnamon, nutmeg... What a slurry of fantastic flavors! Mix those all together with ice cream and pumpkin and you've got a most unusual pie.
This pie is so quick and easy to make, the only problem is that you have to wait for it to set up in the refrigerator for a couple hours before you can dig in. Sorry... but it's worth the wait.
