Ranch House Scrambled Eggs with Cheese

* 8 egg whites
* 6 whole eggs
* 4 Tbsp Ranch dressing
* 3 tsp brown mustard
* 1/4 tsp parsley
* 1/2 tsp garlic powder
* 2 tsp olive oil
* 1/2 C skim mozzarella cheese, shredded

1. Place the egg whites and whole eggs in a bowl and whisk until well blended.
2. Slowly whisk in the Ranch dressing.
3. Add the mustard, parsley and garlic powder and whisk until blended in well.
4. Place the oil into a large skillet and heat over medium heat.
5. Pour the egg mixture into the skillet and cook 2 minutes or until almost set.
6. Sprinkle in the cheese and stir to combine.
7. Cook 1 minute longer or until the eggs are completely set and the cheese has melted.

Makes 4 servings

By increasing the egg whites instead of using all whole eggs, the cholesterol in this dish is reduced. You still get all the great flavor without adding all the egg yolks.

You can use a fat-free Ranch dressing to cut the fat even more. But, watch out for the sugar. Often, when dressings are reduced fat or fat free, the sugar is bumped up for more flavor. If you choose, you may substitute Greek yogurt and a teaspoon or so of mixed seasoning you like.
