Red Hot Heart-to-Heart Potato Pancakes

Ingredients

*1 (14 oz) can chicken broth
*1/2 tsp pepper
*1 green onion, chopped
*1 1/2 C instant potato flakes
*1 C applesauce
*1/4 C red hot candies


Directions

1. Pour the broth into a saucepan.
2. Place the pan over medium heat.
3. Stir the pepper into the broth.
4. Bring the mixture to a rapid boil.
5. Once boiling, remove the pan from the heat.
6. Fold in the green onion.
7. Dump the instant potatoes into the pan.
8. Allow the potato flakes to soak up the broth.
9. Place a heart shaped cutter into a skillet.
10. Place the skillet over medium heat.
11. Fill the cutter with the potato mixture.
12. Cook for 5 minutes, remove the cutter, and then flip the potato.
13. Cook for 3 minutes longer or until a golden brown.
14. Top each pancake with a spoon of applesauce and a sprinkle of the red hot candies.

Story

On Valentine's Day, we like to do something special for breakfast for our littlest Sweethearts. Kids love pancakes made in special shapes, so these heart shaped ones are the perfect choice to say "Be Mine".
