Chicken & Salsa Bake with Bisquick |
Ingredients

* 2/3 cup Original Bisquick mix
* 2 tablespoons water
* 1 egg
* 1 1/2 cups shredded cheddar cheese(set aside 1/4 cup of the shredded cheese for topping)
* 3 boneless, skinless chicken breasts, cut into 1/2-inch pieces
* 2 teaspoons vegetable oil
* 1 1/4 cups chunky salsa (use your favorite or substitute diced tomatoes and spices - see below)

Directions

1. Preheat oven to 400. Coat 9x13 baking dish with non-stick spray.
2. In bowl, combine Bisquick, water and egg; mix well, but don't over-mix. Spread into bottom of baking dish. Then cover with 1 & 1/4 cups of the shredded cheese.
3. Lightly brown cut-up chicken in oil in a skillet over medium heat. (Don't over cook the chicken.) Add salsa and simmer until just heated through, then pour over bisquick mixture. Bake for 25 - 30 minutes or until bubbly and Bisquick mixture looks toasty brown.
4. Top with the remaining shredded cheese and bake another couple minutes, until cheese is melted and bubbly.

I suggest using a glass baking dish if possible. That way you can keep your eye on the Bisquick and make sure it gets golden on the bottom.
Also, if you don't have salsa on hand, you can substitute a small can of diced tomatoes. Just add some grated or minced garlic, salt, black pepper, a little hot sauce, or any spices you would normally like in your salsa. You can't mess this recipe up!
