Saucy Ginger Apricot Stuffed Chicken Cutlets |
Ingredients

Chicken:
* 2 Tbsp butter, melted
* 1/4 cup green onion, chopped, including tops
* 1/4 tsp ground ginger
* 1/2 cup plain stuffing mix
* 2 whole chicken breasts, pounded into cutlets
* 4 ripe apricots, halved, pitted, then cut into thin strips
Sauce:
* 1/2 cup apricot preserves
* 1 Tbsp apple cider vinegar
* 1/4 tsp ground ginger

Directions

1. Preheat oven to 350 degrees.
2. Prepare stuffed chicken: Put melted butter, onions, ginger, and the stuffing mix in a bowl and mix together until combined well.
3. Divide stuffing mixture in half; spoon one half into the center of each chicken cutlet.
4. Arrange apricot wedges on top of stuffing, dividing evenly between the two cutlets.
5. Wrap cutlets around the stuffing and apricots and lay open edge side down in baking dish. (Secure with toothpicks or string if desired.)
6. Bake in preheated oven at 350 degrees for 20 minutes.
7. Meanwhile, prepare sauce: In a bowl, mix apricot preserves, apple cider vinegar, and remaining 1/4 teaspoon ginger.
8. After the cutlets cook for the 20 minutes, remove baking dish from oven and pour sauce over chicken, then return to oven and continue cooking for 10 minutes or until chicken is cooked through.

I love using chicken cutlets. They are the perfect "vehicle" for stuffing and they cook so fast and easy!
This is a great kid-friendly meal. You can't miss with apricots and stuffing! Of course, you can try other fruit. Thinly sliced tart apples would be a great choice.
