Sausage Bean Soup with Parmesan Cheese |
Ingredients

*8 oz. pork sausage, cut up
*1/2 C onion, chopped
*2 (19 oz.) cans of great northern beans, rinsed and drained
*1 (14 oz.) can chicken broth
*1 tsp dried thyme
*2 C fresh spinach, washed and chopped
*1/4 C Parmesan cheese, fine shredded

Directions

1.Place the sausage and onion into a soup pot and cook over medium-low heat for 6 to 8 minutes. Add a drizzle of oil if the sausage is too lean or dry.
2.Stir in the beans, broth and thyme into the mixture and bring to a boil. Turn heat down to low.
3.Cover and simmer on low heat for 5 minutes.
4.Add the spinach and cook the soup 3 to 5 minutes longer or until the spinach is wilted.
5.Sprinkle with the Parmesan cheese before serving.

Sometimes you don't have time to simmer a soup all day. That's why I like this particular recipe. Even without simmering for hours, this is one flavorful soup! That's because you start with pork sausage. Use spicy, hot, or mild sausage (like Jimmy Dean) for the flavor intensity you like. Then, the spinach gives the soup that nice fresh flavor on top of the spicy flavors. Parmesan cheese is always just nice to add to any soup!
