Savory Garbanzo Cucumber Salad |
Ingredients

* 3 tablespoons olive oil
* 3 tablespoons cider vinegar
* 3 tablespoons lime juice
* 1 pinch of cumin
* 1 pinch of dried oregano
* 1 can garbanzo beans, rinsed & drained
* 1/4 cup chopped red onion
* 10 cherry tomatoes (halved if desired)
* 2 cucumbers, chopped
* 1/2 red bell pepper, chopped
* 1 garlic clove, minced
* 1/2 cup sliced green olives
* 1/2 cup crumbled feta cheese
* 1 tablespoon cilantro
* 1 teaspoon salt

Directions

1. Combine first five ingredients in a serving bowl.
2. Add all remaining ingredients and gently toss to coat with dressing.
3. Cover and refrigerate a few hours before serving.

When we go to Greek cafes, we normally choose from the colorful salads laid out for us because they are just so pretty! Pretty and delicious. This garbanzo and cucumber salad is similar to some of the salads we've eaten at these cafes. Topped with sliced green olives and wonderfully sharp feta cheese, this salad is definitely flavorful and a husband-pleasing meal.
Garbanzo beans are a source of protein, but, if your husband insists that a meal isn't complete without meat, you can serve this salad with just a few thin slices of flank steak to make the men in your family feel like they've eaten a full meal.
