Savory Pine Nut and Currant Pasta Salad |
Ingredients

* 16 oz. Penne pasta
* 2 tbsp olive oil
* 2 cloves garlic, crushed
* 2 medium onions, finely chopped
* 1 cinnamon stick
* 2 tsp ground cumin
* 2 tsp ground cilantro
* 1 (14 oz)can chickpeas (garbanzo)
* 8 oz. cherry tomatoes, halved
* 1/3 C dried currants
* 1/4 C fresh basil leaves, shredded
* 1/3 C pine nuts

Directions

1. Cook to pasta according to the directions, drain and set aside.
2. Place the oil in a skillet over medium heat and stir in the onions and garlic.
3. Cook the onions and garlic 5 minutes or until soft.
4. Stir the cinnamon, cumin and cilantro in with the onions and garlic.
5. Add in the currants, peas and tomatoes.
6. Transfer all of the mixture to a serving bowl.
7. Stir in the nuts and basil serving immediately.
