Savory Turkey Noodle Soup |
Ingredients

* 4 cups chicken broth
* 4 cups water
* 1 small onion, chopped
* 1 cup sliced carrots
* 1/2 cup sliced celery
* 2 cloves garlic, minced
* 2 cups cubed cooked turkey
* 1/3 cup chopped fresh dill weed
* 1/3 cup chopped fresh parsley
* 8 oz package wide egg noodles

Directions

1. In a large soup pot mix together: broth, water, onion, carrots, celery and garlic. Heat to a boil, then reduce heat and simmer slowly for about 20 minutes.
2. Add the remaining ingredients and bring up to a boil again. Turn down and gently boil (rolling boil) until the noodles are tender.

Putting together a nice turkey noodle soup is a struggle for me sometimes. I forget what to add to make it delicious and not just another noodle soup. Oh, now I remember... it's the fresh dill and fresh parsley. There is a difference in fresh herbs from dried. Just take a snip off that dill and parsley and you'll smell the difference. I use a whole third cup of each in this soup and that, my friends, is the difference!
