Seared Sesame Parmesan Chicken Cutlets |
Ingredients

* 1/4 C sesame seeds
* 1/2 C Parmesan cheese, grated
* 1 egg, lightly beaten
* 1/4 tsp salt
* 1/4 tsp pepper
* 4 chicken breasts, cut in half and pounded into cutlets
* 1 TBSP olive oil

Directions

1. Toss together the sesame seeds and Parmesan cheese in a shallow bowl.
2. Place the egg, salt and pepper together in another bowl.
3. Dip the chicken cutlets in the egg and dredge through the sesame seed/Parmesan mixture.
4. Heat the oil in a skillet, add the chicken and cook 8 minutes, turning once.

The sesame seeds add a very nice touch to this version of Parmesan chicken cutlets. As you cook the cutlets, the sesame seeds brown a little and you'll notice a very distinctive aroma. Very flavorful!
If you are not sure how to make a chicken cutlet, the easiest way I've found is to buy chicken breasts (boneless,skinless) and slice through them horizontally in half. Then the meaty inside is exposed making them easier to pound out flat. Put them in a plastic food bag and pound them out with an iron skillet. You can also buy chicken tenders and pound those since they are already cut for you.
