Toasting the almonds is easy. Just throw them in a small dry (no oil) skillet over medium heat and shake them around. When you can smell them (they should appear slightly golden in color) they are done. Remove from heat and set aside.
Sesame oil burns easily; that is why you wait until the vegetables have stir fried totally before adding the sesame oil. Use a 'high heat' oil like vegetable, safflower, or peanut oil for the stir frying.
Why serve simple veggies as a side dish when you can so easily fancy them up a bit. This vegetable dish is very yummy and goes well alongside pork tenderloin, grilled chicken, or fish. Enjoy!
