Shrimp & Snow Pea Skillet Dinner |
Ingredients

*2 1/2 cups vegetable broth
*3 lbs shrimp, peeled and cleaned
*1/3 cup green onion, chopped
*1/4 cup soy sauce
*1/4 cup cornstarch
*1/4 cup of cold water
*12 ounces of snow peas
*8 ounces grape tomatoes, cut in half

Directions

1. Bring the broth to a boil in a saucepan over high heat.
2. Add the shrimp, green onion, and soy sauce, then bring up to a gentle boil and cook 3 minutes.
3. Put the cornstarch and cold water into a small bowl and whisk until combined, then stir into the shrimp mixture.
4. Continue to stir until the sauce begins to thicken.
5. Add the snow peas and tomatoes and cook 3 minutes longer.
6. Serve over a bed of hot cooked rice.

Skillet dinners are so easy - and the clean up is a breeze. Cook everything (except the rice) in the skillet and serve from the skillet, too.
When you add the snow peas and tomatoes, don't stir too much so you don't break up the tomatoes.
This is another very quick meal. Shrimp cooks fast and if you time the rice to be cooked ahead and ready when you are, you can easily have this meal on the table in under 10 minutes.
