* 2 Tbsp fresh ginger, grated
* 2 Tbsp soy sauce
* 2 Tbsp sesame oil
* 1/3 C red wine vinegar
* 1 Tbsp sweet chili sauce
* 2 cloves garlic, crushed
* 1 lb. cooked large shrimp, peeled and de-veined
* 8.5 oz dried instant egg noodles
* 5 green onions, sliced diagonally
* 1 red bell pepper, diced
* 3.5 oz snow peas
*2 Tbsp fresh cilantro, chopped

1. Whisk together the first 6 ingredients well and set aside.
2. Cook the noodles as directed on the package and drain well.
3. Place the cooked noodles, shrimp, bell pepper, and snow peas in a bowl.
4. Pour the dressing over the top, sprinkle with the cilantro and toss to coat.
