Simple Mixed Vegetables - Crock Pot

Ingredients

* 1 lb baby carrots
* 1 head cauliflower, cut into small flowerettes
* 1 onion, chopped
* 2 cloves garlic, minced
* 2 tablespoons chicken broth
* 3 tablespoons vegetable oil
* 1/2 teaspoon salt
* 1/8 teaspoon pepper

Directions

1. Combine all ingredients in crock pot.
2. Toss so all vegetables are coated.
3. Cook, covered, on low for 6 to 8 hours.

Story

I like this veggie dish especially during the holidays or any big meal. It frees up the oven and stove top, for one thing, but it also is a very kid-friendly vegetable. The baby carrots are always welcome, and the cauliflower, which has a taste that some kids don't favor, sweetens a bit when cooked with the carrots.
