I like this veggie dish especially during the holidays or any big meal. It frees up the oven and stove top, for one thing, but it also is a very kid-friendly vegetable. The baby carrots are always welcome, and the cauliflower, which has a taste that some kids don't favor, sweetens a bit when cooked with the carrots.
