Sizzling Portobello & Mozzarella Tossed Green Salad |
Ingredients

*3 TBSP of olive oil, divided
*2 C of Portobello mushrooms, sliced
*1/2 tsp crushed red pepper flakes
*3 C mixed greens, torn
*1 C of mozzarella cheese, shredded or cubed
*3 TBSP balsamic vinegar

Directions
|
1.Heat 1 TBSP of oil in a skillet then stir in the mushrooms and red pepper flakes and cook 2 minutes, constantly stirring.
2.Place the greens in a salad bowl and add the hot mushroom mixture and mozzarella tossing to combine.
3.Whisk together the remaining oil and the vinegar and pour over the salad tossing to coat.

The first time I made a combination hot and cold salad my family thought I was nuts. Now, we're all hooked. Tossing together hot ingredients right out of the skillet onto a cold, mixed green salad seems to make the salad a bit fancier, and definitely more filling. Even my husband can see this salad as a real meal... with a few breadsticks added, of course.
