Smoked Sausage and Vegetable Soup - Crock Pot |
Ingredients

* 1 lb smoked sausage, cut into 1/2" slices
* 4 medium potatoes, cut into 1" cubes
* 1 can (15 oz) green peas, drained
* 1 can (14 1/2 oz) chopped tomatoes, not drained
* 2 cubes beef boullion
* 2 tablespoons dried minced onion
* 1 1/2 cups water

Directions

1. Throw everything in crock pot and stir.
2. Cook on low, covered, for 6-7 hours.

I find myself with a couple smoked sausages in my refrigerator that just won't get eaten by my family. I guess they are just tired of the old standby; cheese and sausage on crackers. I had to come up with some way to use these smoked sausages, and soup seemed as good a way as any. Was I every amazed! The smoky and spicy flavor of the sausages adds such a nice kick to the vegetables. It all came together so well, I think I'll be able to use up all my surplus smoked sausage!
