Smoky Ham And Black Bean Stew - Crock Pot |
Ingredients

* 1 lb cooked smoked ham, cubed
* 2 cans (16 oz) black beans, drained and rinsed
* 4 medium gold potatoes, diced
* 2 cans (15 oz size) beef broth
* 1/2 tsp favorite dry rub for barbecue

Directions

1. Put all ingredients in crock pot and stir slightly just to combine.
2. Cook covered on LOW for 7 to 9 hours.
3. To serve, top with a dollop of sour cream, parsley, or diced fresh tomatoes.

You won't find a simpler recipe for a hearty ham stew. I normally have all 5 ingredients in my cupboard or fridge so this is a no brainer for dinner on a cool Fall or Winter evening.
One of my new favorite ingredients is smoked paprika, so I add a dash or two. We also are big potato fans so sometimes add five or six potatoes. I just cut them just a bit smaller so the cooking time is the same. It also stretches the meal inexpensively. You can add a bit of water if you're concerned about the stew becoming too thick. You can also add some diced tomatoes.
Really, this is a very versatile recipe that can take a lot of tweaking.
