Smoky Paprika Potatoes |
Ingredients

* 12 new red potatoes, scrubbed and cut in quarters
* 2 tablespoons vegetable oil
* 1/2 to 1 tablespoon smoked paprika
* 1 teaspoon salt

Directions

1. Preheat oven to 375 degrees.
2. Put all the ingredients in a big bowl and toss with your hands until well coated.
3. Bake for 35 to 40 minutes, turning once or twice.
4. Drain on paper towels and serve hot.

I started making these potatoes with just plain paprika but then discovered how much better the smoked paprika is. A little goes a long way so start with the 1/2 tablespoon before you decide.
