Southwest Layered Salad |
Ingredients

* 1 (15.5 oz.) can black beans, rinsed and drained
* 1/4 cup prepared salsa
* 1/4 cup chopped fresh cilantro
* 2 cups finely chopped romaine or iceberg lettuce
* 2 medium tomatoes, chopped
* 1 (15.5 oz.) can whole kernel corn, drained
* 1 green bell pepper, seeded and diced
* 1 red onion, finely chopped
* 1/2 cup shredded reduced-fat cheddar cheese
* 1/2 avocado, peeled and cut into slices
* 2 slices reduced-sodium bacon, cooked and crumbled
* 1/4 cup fat-free Italian dressing

Directions

1. Combine the beans, salsa, and 2 tablespoons of the cilantro in a small bowl.
2. Layer the ingredients in a 1 1/2 quart clear glass bowl in this order: bean mixture, lettuce, tomatoes, corn, bell pepper, onion, and cheese.
3. Just before serving, arrange the avocado on top.
4. Sprinkle with bacon and the remaining 2 tablespoons of cilantro.
5. Drizzle with the salad dressing.

This is a fabulous salad. I love to make it during the summer. I live in South Louisiana where it is hot and humid. I makes for a refreshing lunch or dinner. I looks great too. When I am really busy with my business, I try to keep the ingredients for this type of fast and easy dinner around. I can always throw it together and refrigerate it for later. It is also low-calorie, so I feel good about eating it. Also, I can eat until I am full!!! If your family likes more meat add grilled chicken or shrimp is great also.
