Spiced Beef & Vegetable Pot Roast - Crock Pot |
Ingredients

* 1 1/2 lbs beef roast, cubed
* 2 tablespoons flour
* 1/2 teaspoon celery salt
* 1/2 teaspoon garlic powder
* 1/2 teaspoon ground ginger
* 1/4 teaspoon black pepper
* 2 cups sliced carrots
* 1 large potato, cubed
* 16 oz can diced tomatoes
* 1/4 cup sherry, or dry white wine may be used as a substitute
* 1/4 cup molasses
* 1 cup water

Directions

1. In separate large bowl, combine flour, celery salt, garlic powder, ginger, and pepper.
2. Coat beef with dry mixture then put meat in crock pot.
3. Add carrots and potatoes to crock pot.
4. Pour remaining ingredients into crock pot.
5. Cook, covered, on low for 8 hours.

Coating the beef with a combination of spices helps ramp up the flavor of this otherwise pretty traditional pot roast. Although, the added sherry and molasses doesn't hurt, either! If you don't have sherry, white wine will do, but the sherry really does add another layer of flavor that you will miss. It's worth investing in a bottle as there are many other good recipes that call for sherry.
