Spicy Bacon-Tomato Pasta Skillet |
Ingredients
|
* 1 medium onion, finely chopped
* 2 cloves garlic, minced
* 4 tablespoons extra virgin olive oil
* 4 slices of bacon, diced
* 1 can (14 oz) chopped tomatoes
* salt & pepper to taste
* red pepper flakes to taste
* 1/4 cup chopped fresh parsley
* 1 lb box of your favorite pasta
* grated parmesan or romano cheese

Directions

1. In large skillet, saute the onion in the olive oil until just transparent. Add bacon and cook for 5 more minutes, stirring often.
2. Stir in the garlic, tomatoes, salt, pepper and red pepper flakes. Simmer for about a half hour.
3. Cook pasta per package directions and drain well. Mix with sauce, top with parsley and grated cheese and serve.

My family can't get enough pasta and cheese! I try to add a little variety to the routine macaroni and cheese, and thought they'd like a little bacon, tomato, and spicy pepper flakes thrown in. I was right! This is a dish that the kids, and Mom and Dad, always ask for.
