This is one of the funniest recipes we've ever tried. When I found out that pork rinds are carbohydrate free and loaded with protein, I thought, what the heck... how bad can they be. Turns out, not bad at all. The crunched up pork rinds do a nice job of replacing the flour coating. I can't say this is the absolute most figure friendly wing ever, seeing as there's butter doing some of the coating, but if you're looking for carbohydrate reduced cooking, this is a fun and funny recipe to try. Be sure to leave the empty package of pork rinds on the counter just so your guests can begin to wonder what got into you.
A heads up... don't add any salt to your mixture. The pork rinds are quite salty enough.
