Spicy Roasted Whole Chicken - Crock Pot |
Ingredients

* 4 tsp salt
* 2 tsp paprika
* 1 tsp cayenne pepper
* 1 tsp onion powder
* 1 tsp thyme
* 1/2 tsp garlic powder
* 1/2 tsp pepper
* 1 large - 4 or 5 lb - roasting chicken
* 1 large yellow onion, quartered

Directions

1. Mix together the salt, paprika, cayenne pepper, onion powder, thyme, garlic and pepper together in a large mixing bowl.
2. Wash the chicken and pat dry, discarding the giblets.
3. Thoroughly coat the chicken with the spice mixture both inside and out.
4. Place the chicken in a glass pan or bowl, cover with plastic wrap and refrigerate overnight.
5. Remove the chicken from the refrigerator and place the onion into the chicken.
6. Lay the chicken into the crock pot and do not add any liquid.
7. Cook covered 9 hours on low.

Yes, this does have to sit overnight, but it is well worth the wait! The dry rub you create with the first 7 ingredients gets a chance to really spice that bird up when it sits for that long.
If you want to crisp the skin up a bit, cut the cooking time down to 8 to 8 1/2 hours, remove to a roasting pan with a rack, and put in a hot (400 degree) oven for 20 to 30 minutes, being sure to keep checking on it. You can even baste the chicken with a bit of butter if you want a real dandy finish.
