Stuffed Accordion Potatoes on the Grill |
Ingredients

*4 baking potatoes
*2 onions, halved and sliced thin
*4 tbsp of butter, sliced
*1/4 C of celery, chopped fine
*1 tsp salt
*1 tsp dried oregano
*1/4 tsp garlic powder
*1/4 tsp pepper

Directions
|
1. Make slices 1/2 inch apart in the potatoes, cutting three quarters of the way through the potatoes and leaving the bottoms intact, then fan the potatoes apart.
2. Place each potato on a piece of aluminum foil and fill the fanned out pieces with onions and butter.
3. Sprinkle the potatoes with the seasonings.
4. Wrap the potatoes up in the foil and seal the foil tightly.
5. Cook on a preheated grill for 40 minutes or until tender.

These potatoes cook well on the grill because they are sliced almost through, making them cook evenly and a bit faster than leaving them whole. By inserting the onion and butter right into the potatoes "fans" the flavors are more infused, too.
