Summertime Vegetable Medley

Ingredients

* 1 TBSP olive oil
* 1 small Vidalia onion, halved and sliced
* 4 small yellow summer squash, sliced
* 4 small zucchini, sliced
* 1 clove garlic, minced
* 1 pint assorted colored cherry tomatoes, halved
* 1 TBSP fresh basil, chopped
* Pepper to taste
* 2 TBSP Parmesan cheese

Directions

1. Pour the olive oil in a skillet and place over medium heat.
2. Heat the oil until just starting to warm
3. Add the onions and cook 2 minutes.
4. Place the squash and zucchini in the skillet.
5. Cook 9 minutes or just until the edges begin to turn a light golden brown.
6. Add the garlic and stir to mix together.
7. Add the tomatoes.
8. Continue cooking an additional 1 minute.
9. Stir in the basil.
10. Sprinkle in the pepper to taste.
11. Stir well.
12. Cook 1 minute.
13. Place mixture in a bowl and sprinkle with Parmesan cheese before serving.
