Sun Dried Tomato Beer Bread |
Ingredients

* 3 cups of unbleached flour
* 3 Tbsp. sugar
* 1 Tbsp. plus 3/4 tsp. baking powder
* 1 (12 oz) can of cold beer
* 1/4 cup sun-dried tomatoes in oil, chopped
* 2 tbsp of the oil from the sun dried tomatoes

Directions

1. Preset the oven to 350 degrees and spray a loaf pan with non stick cooking spray.
2. Toss the flour, sugar, and all baking powder together in large bowl.
3. Add the beer and tomatoes to the flour mixture and stir together - don't overmix.
4. Transfer the batter to the bread pan and bake 30 minutes.
5. Cut 5 slits into the bread crust and brush with reserved oil from sun-dried tomatoes.
6. Bake 10 minutes then remove and cool in the pan for 7 to 10 minutes before slicing.

Just 6 simple ingredients and you have a nice tangy and satisfying bread. This is pretty enough for company, but don't wait for someone to come over... make some for your family tonight.
Or, if the kids are away at Grandma and Grandpa's house, plan a nice late night treat for two. Serve the bread slightly warm with sliced Gouda cheese or other hearty cheese. Cold mugs of beer will go with this bread, but glasses of white wine will do just as nicely.
