Sunny Apricot Gelatin Salad |
Ingredients

* 2 (3 oz) boxes apricot gelatin
* 2 C of boiling water
* 2 C sour cream, divided
* 4 tsp lemon peel, grated and divided
* 1 (16 oz) can apricot halves, drained and chopped coarsely
* 2 Tbsp sugar
* 1 tsp ginger
* 1 Tbsp lemon juice

Directions

1. Dissolve the gelatin completely in the boiling water.
2. Stir in 1 C of sour cream until well blended
3. Add 2 tsp of lemon peel and the apricots and fold in gently.
4. Put the mixture into a gelatin mold or bowl and chill until solid.
5. Mix the rest of the sour cream with the sugar, ginger and lemon juice until combined.
6. Fold in the remaining lemon peel.
7. Remove the gelatin onto a serving platter.
8. Spread the sour cream mixture over the top just before serving.

Gelatin salads are rather old fashioned, but it may be time to reintroduce yourself and your family to them. They are generally inexpensive to make and once your kids try them, they will normally like what they find. Cool, wiggly goodness... sweet and fruity... all good things.
