Sunny Seed Coleslaw |
Ingredients

* 1 tbsp sunflower seeds
* 1 tbsp orange juice
* 1 tbsp sunflower oil
* 1 tbsp white wine vinegar
* 1 tsp honey
* 1 tsp fresh basil leaves, chopped
* 10 oz of white cabbage, finely shredded
* 2 apples, grated
* 6 oz. of carrots, peeled and grated

Directions

1. Soak the seeds in the orange juice for 1 hour the discard the juice.
2. Whisk together the oil, vinegar, basil and honey in a small mixing bowl.
3. Place the cabbage, apples and carrots in a large mixing bowl.
4. Toss in the soaked seeds.
5. Pour the oil mixture over the cabbage mixture tossing to coat well.
6. Chill 2 hours before serving.

This is a nice twist on a traditional cole slaw salad. It's a bit sweet, but still has that nice tangy taste that most of us enjoy in our cole slaw salads. Nice crunchy texture, too.
