Super Sunday Fruit Salad |
Ingredients

* 3 bananas, peeled and sliced
* 1/2 lb red seedless grapes
* 1/2 lb green seedless grapes
* 1 lb strawberries, hulled and sliced
* 5 peaches, peeled, pitted and chopped
* 3 kiwis, peeled and chopped
* 1/4 C sugar
* 1/2 C pineapple juice
* Juice of 1 lime
* 1/2 tsp ground ginger

Directions

1. Combine the sliced and chopped fruit in a large serving bowl.
2. Sprinkle with the sugar and toss gently.
3. In a small bowl whisk together the pineapple juice, lime juice and ginger.
4. Pour the dressing over the fruit, mixing gently.
5. Cover and chill until ready to serve.

This is the kind of fruit salad that's as pretty as it is tasty. It's also the kind of fruit salad that is different from the heavy, whipped cream style salads. This is all fresh and fruity without anything covering up the flavor of the fruit itself. I like using 'exotic' fruits like kiwi instead of the old reliable apples, etc.
Instead of just using 1/2 cup pineapple juice, you can drain a can of pineapple chunks, mix the pineapple in with the other fruit, and use the juice you drained from the can.
